South Beach Day #1
Not long ago when in one of my favorite online places, we were discussing weight loss and Laura, one of the members, mentioned that she had recently started the South Beach Diet. She was so motivated that I had to find out more. Luckily she is a blogger so I was able to read her progress at Got Chocolate and thought, I can do this, and I HAVE to do something.
I went to Amazon and ordered the books that she recommended (The South Beach Diet: The Delicious, Doctor-Designed, Foolproof Plan for Fast and Healthy Weight Loss and The South Beach Diet Super Quick Cookbook: 200 Easy Solutions for Everyday Meals
, and resolved that I was going to start this the first week I went back to work. Today was my first day back so today was Day 1 of my 14 days of The South Beach Diet, Phase I. I’ll go into more details about the diet itself in a future post, but to sum it up – for the next 2 weeks, I can eat no fruit, no sugar, and no carbs. Meats should be lean.
I wasn’t so worried about my willpower except for a few things, and this is how they went today
- my morning glass of sweet tea – I started cutting back on my tea knowing this was happening, but didn’t eliminate my morning one until this morning. I managed.
- no fruit? Well crap! I also have a banana most mornings. I’m not a morning eater and this is just enough to put something in my belly, but not make me feel sick to my stomach. I managed, but didn’t like it this morning, and wanted one BAD again when I got home and they were sitting on the counter. My decision – when these last 3 are gone, my daughters won’t be having bananas in the house for themselves either for the next 2 weeks. LOL
- No baked potato. I don’t need sugar (except that morning class of tea). I don’t eat a lot of breads, but I love me a good stuffed baked potato. And I mean LOVE. We have baked potatoes as a meal at least once a week at my house (frequently twice). And what did my youngest want for supper tonight? You guessed it. A baked potato. It was pure he**, but I made my “baby” a baked potato and didn’t take one bite.
So what did I eat today?
Well I drank about 6 – 8 (lost count) bottles of 16.9 ounce bottles of water.
For breakfast I had the South Beach Diet Breakfast Bowl Recipe in the cookbook mentioned above. It basically consists of eggs, beans, salsa, and an avocado. I left out the beans as I don’t like them and it was REALLY good. I even had the girls eat it this morning and they ate every bite. I had something else picked out for tomorrow, but just might eat that again. Yes, it was that good. I did feel a little sick after eating it (normal for me if I eat in the mornings), but I ignored it until it went away.
The next meal should be a mid morning snack, but I didn’t get a chance to eat again (at work remember) until 11:30, but at that time, I grabbed a low fat cheese stick (twisted mozzarella and cheddar) to munch on while I did a little paperwork.
Since my “snack” was so late, I didn’t have lunch until 1. For lunch, I tried a tuna salad out of the informative South Beach book. Not my thing, won’t be repeating that one. But I did manage to eat enough of it to make sure I wouldn’t be hungry for a couple more hours.
I went to my parents after school today and while visiting, did my afternoon snack – a sliced tomato with a little pepper on it.
When we got in, I was excited to try another recipe in the Super Quick Cookbook mentioned above – “Tortilla” Soup. Tortilla is in quotations because there is really no tortillas in it, but it was YUMMY! My youngest doesn’t think she likes tomatoes so she wouldn’t have any of it (thus the baked potato), but I loved it enough that I have already prepared a bowl for lunch tomorrow! SCORE!
You are allowed a dessert also – recommendation: Sugar Free Jello. I bought several boxes and honestly intended to make some last night, but I forgot. No biggie though as I really haven’t felt that “Sweet” need. I am going to either make some tonight or in the morning though so I have some on hand if that sweet tooth kicks in one day.
The only other issue I had today was that while I didn’t crave anything in particular to drink – I craved something with TASTE! I had a small (child cup size) glass of milk with my breakfast this morning. Since I couldn’t shake the feeling this evening, I had a full size (16 ounces?) glass with my dinner too. It’s 1% though and allowed so no worries!
All in all I’m happy with my day. I didn’t find it bad at all. Number 1 – I wasn’t every hungry, and I didn’t really face any major cravings either. My only problem with this is honestly, we eat a lot of processed food and having to cook (and 2 things when it’s something Cameron doesn’t like) or just prepare (in the case of a salad), 3 meals a day I know is going to get burdensome. I hope to find some more things I really like (such as the soup tonight) that I can use leftovers for at least a lunch or two also. There’s also a breakfast casserole recipe in one of the books, I might make up this weekend. It can be frozen and reheated so I was thinking, I’d freeze single servings and maybe just heat those up for breakfast most days next week to take out a little of the work too.

I thought about not doing this, but I want to be completely honest with you (and hope that honesty keeps me on track) so I weighed this morning and I’m actually going to share it here. I won’t weigh daily, but every few days I’ll give you an update. According to the WiiFit, this morning before leaving for work, I weighed in at 182 pounds with a BMI of 27.63. (For the record, that disturbs me big time to admit.)

Great job on day one!
I’m on day (1 week and 4 days) I am incredibly bloated the last 2 days…my stomach. i read it’s normal as my body adjusts but it is annoying as all heck.
I love the diet. Am not hungry, DO NOT crave much besides peanut butter, which I can have! I bought that natural cause you can eat more.
Let me know how it continues for you. I lost 4.4 lbs the first week so far.
GREAT job Kimberly for trying the South Beach Diet! I’m in Phase 1 still and will be until i lost the remaining 12 lbs. or so. I still feel great and even if i do cheat once in a while it’s not such a blow to my system because I’ve been eating healthy all this time. The only problem is eating all that broccoli I was eating then if I eat a little bit of sugar my stomach gave me quite a bit of pain from getting gasey! Other than that I’ve been maintaining my 7 lb. weight loss, even after eating some no-no foods at the fair. It helped that I walked a lot at the fair too.
Keep up the good work. That’s GREAT!!!
